- 1 cantaloupe, peeled and seeded
- Juice of 1 lime
- Salt to taste
- 2 teaspoons of high-quality balsamic vinegar
- Cut cantaloupe into 1 inch chunks
- Place about 1/4 of it in a blender and process until it’s pureed
- Once pureed, add remaining melon , processing until it’s a smooth mixture
- Add lime juice, salt, and blend again
- Divide into bowls and drizzle with balsamic vinegar
